What is Sulforaphane?

Sulforaphane is a natural plant compound obtained from cruciferous vegetables like broccoli, bok choy, and cabbage.

It is present in the inactive form glucoraphanin. When glucoraphanin interacts with myrosinase, a family of enzymes involved in the defense response of plants, sulforaphane is activated.

Only when a plant is damaged, myrosinase enzymes can be activated and released. Therefore, in order to release myrosinase and activate sulforaphane, cruciferous vegetables must be cut, chopped, or chewed.

Therefore, it is advised to avoid boiling or microwaving cruciferous veggies. Instead, consume them raw or lightly steamed in order to get their maximum sulforaphane content.
